Crazy Lacie Shrimp Tacos

My best friend Jenn is a fabulous host and an even more fabulous cook. She is responsible for this recipe I'm about to share and it's named after this amazing fur baby, who is crazy. Lol

I now present Lacie, the namesake of “crazy Lacie shrimp tacos”

These are a nice spin on the typical taco and would be a great addition to throw in to any Taco Tuesday. Here is what you will need.

1 red pepper (cut in strips)

1 green pepper (cut in strips)

Medium size white or yellow onion cut the same way

1 pound of fresh or frozen shrimp.

Olive oil

Taco seasoning packet

1/3 to 1/2 a cup of Plain Greek yogurt

Shredded cabbage

Thin sliced radish

Cilantro

1 avocado

Lime wedges

Flour or corn tortillas (I prefer flour)

In a medium sauce add 2 tbsp of olive oil and turn to medium high.

Add the peppers and onions. Cook until onions begin to soften but aren't completely cooked. Add shrimp. If using fresh shrimp cook until pink and curled. If using frozen (be sure to thaw before hand) cook until warm. Remove from heat. Stir in half a pack of taco seasoning, and then add 1/2 to 1/3 a cup of the PLAIN Greek yogurt. You want the shrimp mixture creamy and not runny.

Heat or prepare your soft tortillas to your liking. Add the shrimp mixture. Top with the shredded cabbage, radishes, cilantro, avocado, and squeeze the lime wedge on top. Voila!!!!
